Chicken cashew nut salad, usually called cashew chicken is a Chinese-American dish that combines chicken (usually stir-fried but occasionally deep-fried, depending on the variation), with cashews and either a light brown garlic sauce or a thick sauce made from chicken stock, soy sauce and oyster sauce. The traditional version of cashew chicken is stir-fried in a wok. Tender chunks of chicken are combined with crispy roasted cashews, vegetables and are tossed in a light sauce made from garlic, soy sauce and hoisin sauce, thinned with water.
INGREDIENTS
For chicken marinade
Chicken breast of one chicken
½ teaspoon garlic paste
½ teaspoon ginger paste
Salt and black pepper powder
1 egg
¾ tablespoon of corn flour
Dressing
½ cup tomato sauce
½ cup sweet chilli sauce
1 tea spoon soy sauce
1 table spoon vinegar
1 table spoon lemon juice
Crunchies
Cashew nut
Fruits and vegetables of your choice
METHOD
Take breast piece of one chicken. Slice it thinly. Then add ½ teaspoon of garlic paste, ½ teaspoon of ginger paste, salt, black pepper powder, one egg and ¾ table spoon of corn flour. Keep the marinated chicken aside. Now cut fresh vegetables and fruits of your choice for making the salad.In a pan add little bit of oil and fry the chicken breast pieces. Let it cool. In the same oil fry one hand full cashew for 3/4mins and let it cool. Now in a serving bowl add all the ingredients (chicken, cashew nut, cut vegetables and dressing) and your chicken cashew nut salad is ready.
