Egg, Arugula & Dijon Toast


This light and quick recipe starts with a great tasting, good-for-you ancient grain bread that’s topped with a handful of simple and fresh ingredients. It’s perfect for the morning, as a snack, or anytime you're craving something wholesome and delicious.



Ingredients

½ cup arugula

½ teaspoon lemon juice

1 dash salt

1 dash ground black pepper

2 teaspoons Dijon-style mustard

1 teaspoon mayonnaise

1 slice, toasted or Whole Grain Honey Wheat Bread

1 hard cooked egg, peeled and cut into 6 slices


How to make it

Step 1

Stir the arugula, lemon juice, salt and black pepper in a small bowl.  Stir the mustard and mayonnaise in another small bowl.

Step 2

Spread the mustard mixture on the bread slice.  Top with the arugula mixture and the egg. Season with cracked black pepper, if desired.
